Peach Muffins

Peach streusel muffins! A moist fresh peach muffin with a crisp streusel top and a vanilla glaze. The perfect summer muffin to compliment your breakfast!

Baking in the summertime is so much easier with fresh fruit on hand! Using fresh peaches in this muffin recipes makes them extra delicious. If your like me and live in an area where peaches are non existent most of the year, you can use frozen peaches, but there truly is nothing like using fresh peaches in this recipe. You can also sub the fruit in this recipe for strawberries, blueberries, raspberries, really anything you want. If I happen to get any fresh huckleberries this summer I will be using them in combination with the fresh peaches. Huckleberries and peaches are a match made in heaven.
I am all about texture and as I bite into these muffins I get a moist cake that melts in your mouth followed by the crunch of the streusel top. Add a glaze onto any coffee cake or muffin and I am here for it! While I was making these my kids were just waiting to lick up the extra glaze that dripped off the muffin tops onto the parchment below. As a kid I remember doing this too when my mom would make anything with a glaze. I love a good muffin, I am always so disappointed when I spend $4.50 on a muffin at a coffee shop or bakery only to discover that it is stale or dry. I am very picky about my baked goods and I believe for a muffin to be at its finest, it was be moist, the paper liner must peel away easily (hint... put the liners into the tin first then spray the liners and muffin tin with non stick spray! Never sticks!), it must be fresh, and flavorful. These peach muffins are ALL THE THINGS!
Peach Muffins
Ingredients
Muffins
1 stick unsalted butter, room temperature
2/3 cup packed light brown sugar
2/3 cup full fat plain greek yogurt
2 large eggs, room temperature
1 tsp pure vanilla extract
1/2 cup milk
2 cups all purpose flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
2 cups fresh peaches (or frozen) chopped
Streusel Topping
2/3 cup Flour
4 Tbsp brown sugar
1/2 cup soft butter
Glaze
1 cup powdered sugar
1 Tbsp half and half
1 tsp vanilla
Directions
Preheat the oven to 425 degrees F and add 16 cupcake liners to your muffin tins. Spray with cooking spray.
In a medium sized bowl mix 2 cups of flour, 1 tsp cinnamon, 1 tsp baking powder, 1 tsp baking soda and set aside.
In a separate medium mixing bowl beat 1 stick soft butter and 2/3 cup of brown sugar. Mix in 2/3 cup full fat yogurt and 2 eggs. Lastly, mix in 1 tsp vanilla and 1/2 cup milk.
Add the wet ingredients to the dry ingredients and mix until combined. Fold in the chopped peaches.
Make the streusel topping. Combine 2/3 cup flour, 4 Tbsp brown sugar, and 1/2 cup soft butter. Mix until crumbles form. Distribute the muffin batter evenly into each liner and then add 1 Tbsp of crumbs on top of each muffin. Bake for 15 minutes.
While the muffins bake make the glaze. In a small bowl add 1 1/2 cup of powdered sugar, 1 1/2 Tbsp of half and half, and 1 tsp of vanilla, and mix well.
Drizzle the glaze over the tops of the warm muffins!
