I LOVE scotcheroos! These irresistible treats are full of Rice Krispies Cereal, peanut butter, semi sweet chocolate and butterscotch chips. They are so easy to make and the perfect treat to share with those you love on Valentines Day! Let's get baking, or should I say NO baking?!

Scotcheroos Chocolate Nostalgia


Valentines Day No Bake Scotcheroos were inspired by my childhood. Scotcheroos are one of my all time favorite desserts and something my mom made a lot growing up in Montana.


When I think about Scotcheroos, I think of home, backyard BBQ's, birthday parties, and the remnants of chocolate all over my hands and face. The crunch of the Rice Krispies combined with the chewy peanut butter sugar and the rich chocolate butterscotch topping make them a dessert you will never forget!



Frequently Asked Questions About Valentines Day No Bake Scotcheroos


Are there other variations I can make? Yes! You can change out the cereal you use in these Valentines Day No Bake Scotcheroos, I've made these with Special K, Cheerios, Kix, or Corn Flakes, it's fun to create different variations.


Can I use a different nut butter? Yes, however I've found they taste the absolute best with peanut butter. If you try a different nut butter like almond butter you may want to replace the butterscotch chips with another 1/3 cup of semi sweet chocolate.


Can I use a natural peanut butter for this recipe? I've said this with almost every peanut butter recipe I write, Jif or a premixed peanut butter bakes or no-bakes so much better than a natural peanut butter. You may find your recipe is more dry if you use natural peanut butter!







Valentines Day Easy No Bake Scotcheroos


Ingredients


⅓ cup light corn syrup

⅓ cup granulated (white) sugar

⅓ cup creamy peanut butter

2 cups Kellogg’s Rice Krispies cereal


Topping 

 

2 Tbsp of festive sprinkles

⅓ cup butterscotch chips 

⅓ cup of semi sweet chocolate chips 

1 tube store bought red frosting with a fine tip on the end



Instructions


1. Prepare Your Pan

  • Spray a heart-shaped silicone pan with non-stick cooking spray and set it aside.


2. Make the Base

  • In a medium saucepan over medium heat, combine the ⅓ cup corn syrup and ⅓ cup sugar. Stir continuously until the mixture comes to a boil.

  • Remove the saucepan from heat and immediately stir in the ⅓ cup creamy peanut butter until fully combined.

  • Place 2 cups of Rice Krispies cereal into a medium mixing bowl. Pour the peanut butter mixture over the cereal and stir until evenly coated. Note: The mixture will be very sticky!


3. Shape the Hearts

  • Add about ⅓ cup of the cereal mixture into each heart cavity in your silicone pan. Press firmly to ensure the mixture takes the shape of the mold.

  • Allow the hearts to cool completely. For faster cooling, place the pan in the refrigerator for 15-20 minutes. Once cooled, gently remove the hearts from the silicone pan.


4. Make the Chocolate-Butterscotch Topping

  • In a microwave-safe bowl, combine ⅓ cup butterscotch chips and ⅓ cup semi-sweet chocolate chips. Microwave at 40% power for 2 minutes, stirring every 20 seconds, until smooth.

  • Distribute the melted chocolate mixture evenly into the bottom of each heart cavity in the silicone pan. Tap the pan gently on the counter to settle the chocolate.


5. Assemble the Scotcheroos

  • Place each cooled Scotcheroo heart back into the mold, pressing gently so the chocolate adheres to the base.

  • Refrigerate the pan for 5-10 minutes, or until the chocolate is set.


6. Decorate

  • Carefully remove each heart from the mold, handling them by the edges to avoid smudging the shiny chocolate topping.

  • Using the red frosting, pipe a decorative heart or any design onto the chocolate top. Add sprinkles to make them extra festive.





Tips for Success


  • For easier handling, lightly grease your hands or spatula before pressing the cereal mixture into the mold. I spray cooking spray onto my hands before I press the treats into a pan or mold.


  • To avoid overheating the chocolate, always use low power in the microwave. I set mine to 40%. power and it takes about 2 minutes for the chocolate to fully melt. Make sure to stir the chocolate every 20 seconds for an even melt.


  • Store the finished Scotcheroos in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.


  • You can freeze scotcheroos! Store them in an airtight container for up to 2 months.


  • Scotcheroos are best served at room temperature, so if you store them in the refrigerator, take them out about a hour before you are going to serve them or they will be very hard to chew!
